Mr. José Antonio Salaverria, owner of Santa Rita farm, started with the program of inclusion and process of specialty coffees 5 harvests ago, together with the guidance and support of JASAL. The Santa Rita farm is located in the most prestigious areas of the Apaneca Ilamatepec coffee region. Mr.  Salaverria puts a lot of effort in carrying out all the activities of the farm on time and also a lot of care and attention to detail at the time of the coffee harvest, allowing him to differentiate himself significantly from other coffees.

Santa Rita Black Honey is one of the latest projects of José Antonio Salaverria. It was carefully decided to put this coffee into a natural process because of its mature homogeneous ripeness.
Santa Rita coffee is carefully selective handpicked by professional pickers that have been working at the farm for more than 10 years. More over since the coffee is so delicate it is dried in raised table which permits a more stable and homogeneous drying.

The importance of selective picking has become part of the company’s culture and success. Time and effort goes into training and education pickers on the best ways to select only ripened cherries. Top quality coffee comes from the farm itself in addition to the way the cherries are treated and picked.
